What I love about this salad…

  • Perfect light lunch
  • 1 1/2 cups cooked organic red quinoa
  • 1 1/2 – 2 tablespoons extra-virgin cold-pressed organic olive oil
  • 1 organic green apple, thinly sliced
  • 2 tablespoon goat feta cheese, crumbled
  • Handful organic walnuts
  • 5 organic cherry tomatoes, cut in half
  • 4-6 cups of organic arugula leaves
  • Half and organic avocado, sliced
  • Juice from an organic lemon, to taste
  • Himalayan pink salt and black pepper, to taste

 

Prep time: 10 minutes

Directions:

  1. Cook quinoa according to directions on the packaging.
  2. In a large bowl place organic green apple slices, goat cheese, organic walnuts, cherry tomatoes, and organic arugula. Once quinoa has cooled add to bowl with remaining ingredients. Toss ingredients together then add organic olive oil and organic lemon juice. Continue tossing until thoroughly mixed.
  3. Season with salt and pepper
  4. Top with organic avocado slices
